White Corn vs Yellow Corn for bread
Does white cornmeal make a decent corn bread? I have given up trying to find a reasonable source for non-GMO dried corn. It turns out that there isn't any GMO varieties of white corn, so I decided i'll just buy that instead of yellow corn. The only problem is I never tasted cornbread made with white corn. Does it taste the same?

Re: White Corn vs Yellow Corn for bread
I'm willing to bet the white meal is still tasty. It's just that meal has been stripped of the corn's nutrients. Get whole ground corn meal or whole ground corn flour.
I use whole corn flour, Bob's Mill. You have to add baking powder and a healthy pinch of salt, but the bread is cake like and very yummy with beans and greens.:D Then, desert is more bread with butter and raw honey. |
Re: White Corn vs Yellow Corn for bread
White cornbread has been preferred in my family back to my great grandmothers on both sides.
edit to add - who grew the white corn themselves. |
Re: White Corn vs Yellow Corn for bread
what about pop corn meal does any one know if you can use pop corn for corn meal??? |
Re: White Corn vs Yellow Corn for bread
The kinds of corn diverged, each best to its own purpose. I doubt popcorn would make very good meal. What my family called 'horse corn' is meal corn too, and sweet corn is for fresh eating. (Though fresh picked horse corn is not bad at all.)
